Pasta with “vruoccoli-arriminati”.

This dish has a strong and distinct flavor. Palermo’s traditional dish, the pasta with vruoccoli-arriminati is simple but very delicious.

arriminato is with raisin, onion, pine nuts, salty Sardinians, and a hint of color and perfumed saffron.

Add the whole lot to a little mudica atturata, that is grated and toasted bread. Also known as cheese of the poor. Broccolo, which Sicilians refer to as cauliflower for the rest of Italy, can be prepared without any other ingredients or added tomato extract.

Recipe (4 Person)

  • 400g maccheroni or bucatini
  • Broccolo medium size
  • 1 onion
  • 4 salty Sardinians
  • Extra virgin olive oil
  • Salt and pepper
  • 2 bags of saffron
  • 100g grated and toasted bread ( Mudica Atturrata).
  • 50g of raisin
  • 50g pine nuts

In a small saucepan, soften the pine nuts and raisins. Boil the broccoli in the boiling water to make bucatini. Stir fry chopped onion. Add salty sardinians and pine nuts. Finally, add boiled broccolo, saffron, and raisin. Mix the sauce with the pasta once it is done. Sprinkle some salt on top.
